Vegan Sugar Cookies

These classic vegan sugar cookies are the perfect blank canvas for your baking creativity. They have a delightful sweetness, a tender-crisp texture, and a hint of vanilla. They’re easy to customize and delicious whether enjoyed plain or decorated with colorful icing and sprinkles!

Ingredients

  • 1 cup (2 sticks) softened vegan butter
  • 1 cup granulated sugar
  • 1/4 cup plant-based milk (soy, almond, etc.)
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour (or 1:1 gluten-free flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Cream butter & sugar: Beat together butter and sugar until light and fluffy.
  2. Add wet ingredients: Mix in plant-based milk and vanilla extract.
  3. Whisk dry ingredients: Combine flour, baking powder, baking soda, and salt in a separate bowl.
  4. Combine & chill: Add dry ingredients to wet, mix until just combined. Chill dough for at least 30 minutes.
  5. Preheat & roll: Preheat oven to 375°F (190°C). Roll chilled dough to 1/4-inch thickness on a floured surface.
  6. Cut & bake: Use cookie cutters to cut out shapes. Bake on parchment-lined sheets for 10-12 minutes, or until edges are lightly golden.
  7. Cool & decorate: Let cookies cool on baking sheets, then decorate as desired!

Notes

  • Gluten-free: Easily adapt this recipe by using a 1:1 gluten-free baking flour blend.
  • Nut-free: Substitute coconut oil for the vegan butter.
  • Extra flavor: Add a teaspoon of cinnamon, a pinch of nutmeg, or a splash of almond extract.
