# Ingredients:

For the ginger lemon water

01 - 6 cups (1.4 L) water
02 - 3 inches (70 g) fresh ginger, scrubbed and thinly sliced
03 - 1 cinnamon stick
04 - 1 large lemon, juiced
05 - 8-10 fresh mint leaves
06 - 1 teaspoon maple syrup, optional

# Instructions:

01 - Scrub the ginger and lemon well. Slice the ginger thinly so it releases flavor quickly. Halve the lemon and set it aside for juicing later.
02 - Add the water, sliced ginger, and cinnamon stick to a medium saucepan. Bring to a gentle simmer and cook for 10-12 minutes, until the water is fragrant and lightly golden.
03 - Remove the pan from the heat. Stir in the fresh lemon juice. Taste and add the maple syrup if you want a softer finish.
04 - Strain the drink into a heat-safe pitcher or glass bottle. Add the mint leaves and let the drink cool to room temperature.
05 - Serve warm or pour over ice. Refrigerate leftovers in a covered bottle for up to 3 days, diluting with cold water if the ginger becomes too strong.
