Scrub the ginger and lemon well. Slice the ginger thinly so it releases flavor quickly. Halve the lemon and set it aside for juicing later.

Add the water, sliced ginger, and cinnamon stick to a medium saucepan. Bring to a gentle simmer and cook for 10-12 minutes, until the water is fragrant and lightly golden.

Remove the pan from the heat. Stir in the fresh lemon juice. Taste and add the maple syrup if you want a softer finish.

Strain the drink into a heat-safe pitcher or glass bottle. Add the mint leaves and let the drink cool to room temperature.

Serve warm or pour over ice. Refrigerate leftovers in a covered bottle for up to 3 days, diluting with cold water if the ginger becomes too strong.
